Have about 2 years experience doing these kind of gigs. I could write something about volunteering and staying with people for exchange in general, some key points etc, would that be something beneficial for you?
Haven't done anything in Mexico and have only been to NW Baja Califonia. Personally more interested in Southern Areas...

Just starting WWOOFing myself, and haven't yet been to that particular farm. As things commence I'll be glad to share whatever perspectives I gain...
Keep a volunteer state of mind with expectations low and an anything could happen attitude, don’t hold interactions with people as something to work. Invest in yourself and allow the result of learning specialized craft viable. It’s a mutual exchange communication in a relationship, being with someone personally, not on strict business matters. Look for compatible people and have liberal hunger for experience based learning, being involved in projects at hand. Naturally gravitate towards opportunities with a semi-clear goal. Respect others space, company and there vision. If its becomes stagnate, move on, be portable. My state of mind is that of being a refugee or exchange student to be taken in and shown, not to lean. You have something to offer them, as they have for you, this is the purpose. Stay focused on goals of collaboration, where it is and where its going, remain optimistic but realistic.
Well I was two weeks in an old Hacienda en Huamantla, Tlaxcala. It's called La Malinche Hacienda, something like that. It was a wonderful experience ! I worked a lot: food for animals, cooking, cleaning, service etc. But it was in a good environment and with a lot of fun. People there are really nice, and speak english. But they can help you to learn spanish. I recommend you to send a message and ask what do you want to know. But I really recommended you this hacienda ! Have fun
